From the Atlantic to the Black Sea, along the Loire, the Rhine and the Danube, the gastronomic traditions of the countries crossed share a common foundation linked to the riches of the rivers. The soils and sunny aspects of the hillsides overlooking the Loire, the Rhine and the Danube are ideal for fruits and vines. Of course, flavours change along the route as each region has its own particular soils, varieties and production methods. The Loire, Burgundy and Bade-Würtemberg regions all produce excellent wines, each with its own individual characteristics. Dishes based around fish from the rivers provide another link in this culinary river journey, although forest regions, such as Swabia, tend to specialise in game and mushrooms.
